Waikiki Meatballs Beef

Serving size: 6


- 1.5 lb ground beef
- 2/3 cup crushed cracker crumbs
- 1/3 cup minced onion
- 1 egg
- 1.5 t salt
- 1/4 t ginger
- 1/4 cup milk

- 1 T cornstarch (flour will also work)
- 1 can (13 1/3 oz) pineapple chunks (drain BUT KEEP SYRUP)
- 1/2 cup brown sugar
- 1/3 cup vinegar
- 1 T soy sauce
- 2/3 cup thinly sliced bell pepper

- Serve over rice


1. Mix all the meatball ingredients together and shape into meatballs. Cook in frying pan till done. Take out of frying pan set aside.

2. Mix cornstarch and brown sugar. Stir in pineapple syrup, vinegar, and soy sauce. Stir until smooth. After you have poured out any fat left in the frying pan from the meatballs, pour in your sauce mixture. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir until quite thick.
