Spicy BBQ Pulled Pork Tenderloin Pork

- 2 pork tenderloins, trimmed of fat and silver skin
- 1 medium onion, sliced
- 1 C water and/or chicken stock
- 1/2 C BBQ sauce
- 4 strips bacon, optional
- Italian dressing for marinade, optional
- Soy sauce for marinade, optional

Dry rub (adds spice)
- 1 tsp ground black pepper
- 2 tsp chili powder
- 2 Tbsp paprika
- 1 Tbsp ground cumin
- 1 tsp dried oregano
- 1 Tbsp dark brown sugar
- 2 tsp table salt
- 2 tsp granulated sugar

optional, to increase heat, add
- 1/2 tsp cayenne pepper
- 1/2 tsp ground white pepper


Mix all the chili rub ingredients in a bowl, then rub onto meat.

Marinade tenderloins with a couple splashes of italian dressing and soy sauce, enough to flavor, and put in plastic bag or container in fridge for 1 hour.

Place tenderloins in crockpot, slice onions and distribute over meat.

Mix 1 C or more of water/chicken stock with bbq sauce and pour over meat and onions.

Optionally, lay bacon strips on top of onions and tenderloin.

Cook on high for up to 4 hours, check at 3 for doneness. Or cook on low for 5-6 hours.
