Oatmeal Banana Cookies Dessert

Prep time: 10 Minutes


For the oats, 3 options:

- 2c gluten free quick cook oats
- 1-1/2c oats + 1/2c oat flour
- 2c regular old fashioned oats (this is what I've been doing recently)


• oats (as described above)
• 2 ripe bananas
• pinch ground cinnamon
• 1/2 tsp salt
• 1/4 tsp baking soda
• 3/8c canola (or walnut oil)
- (optional: 2tbs chopped walnuts)
- (optional: handful carob chips)


Mash everything together in a big bowl; spoon onto pan and bake at 350 degrees for 12-17 minutes (I do 12 minutes for Liam so they are softer)

* I store the cookies in the fridge. And, make a big batch & freeze some for later! I just stick the frozen ones in the fridge to defrost and they are ready to enjoy after just a few hours.
