Minestrone Soup

Ingredients

- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (12 0z) tomato-vegetable juice
- 2 cups endive, cut into ribbons
- 1 cup chopped green onions
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 medium potato, peeled and diced
- 1/4 cup dried cannellini (great northern) beans, rinsed
- 2 T chopped fresh chives
- 1 T chopped fresh flat leaf parsley
- 1/4 t salt
- 1/4 t black pepper
- .5 - .75 lb stew meat
- 2 ounces uncooked ditalini pasta (approx 3/4 cup)

Instructions

1. Place all ingredients EXCEPT pasta in crock pot. Stir well to combine. Cover, cook on low 6-8 hours or on high 4 to 6 hours.

2. Add ditalini and stir again. Cover and cook 20 more minutes. Serve
