Lasagna Beef

8oz package non-cook lasagna noodles (or boiled noodles if you prefer)
1lb ground beef
2 6oz cans of tomato paste
4 6oz cans water
1 package (1oz size) spaghetti sauce mix (thick mix packet is best)
2 12oz cartons small curd cottage cheese
3tbsp finely chopped parsely
1lb grated mozzarella cheese
1/2C grated parmesan cheese


Meat Sauce:
Brown ground beef. Season to taste with salt & pepper. Stir in tomato paste, water, and spaghetti sauce mix. Cover and simmer about 30 minutes or until thick, stirring occasionally.

Cheese filling:
Mix together cottage cheese, parsley and mozzarella cheese.

Lightly grease a large baking dish and spoon in enough meat sauce to cover the bottom. Top with strips of noodles. Spread with part of the cheese filling. Repeat layers, ending with meat sauce. Sprinkle parmesan cheese on top.

Bake in 350 oven for 40-50 minutes. Note: You don't want it juicy or runny so it should be quite thick when you take it from the oven. Let stand 5-10 minutes to set layers. Cut and serve.

This can be prepared 1 day before and refrigerated. When ready to use, let stand at room temperature about 1 hour and then bake 1 hour at 350 oven.
