Granola Breakfast

Serving size: 6-8


- 5 C rolled oats (NOT quick oats)
- 2+ tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp ground cloves
- 1/8 tsp allspice
- 1/8- tsp cardamom
- 1/2 C almonds
- 1/2 C pecans
- 1/2- C walnuts
- dash of salt (optional)

- 1/2 C pure maple syrup/honey
- 1/2 C oil (canola, mediterranean blend, etc.)
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract


Mix oats, roughly chopped nuts and spices in a large bowl. In a separate container, mix maple syrup, oil and extracts. Add liquid to dry ingredients and mix really well. Spread even layer across a sheet pan with silpat. Evenly compress using wax or parchment.

Bake at 325 F for 25 minutes or more as needed. Oats should start to crisp. Test by tasting a nut.

Serve with dried and/or fresh fruit and yogurt.
