Easy Enchilada Casserole Poultry

Ingredients

- 1 medium onion chopped
- 2 T vegetable oil
- 1 (19 oz) can enchilada sauce
- 1 (16 oz) can black beans
- 1 (14.5 oz) can diced tomatoes with jalapenos
- 1 (11 oz) can corn
- 1 t chili powder
- 1 t ground cumin
- 1 (10 oz) package corn tortillas, quartered
- 1 rotisserie chicken, chicken removed and chopped or shredded
- 3 cups shredded cheese

Instructions

1. Saute onion in hot oil in a large skillet over med-high heat until tender.

2. Stir in next 6 ingredients. Reduce heat to low, stirring often (5 min or until thoroughly heated)

3. Lightly grease a 13 X 9 inch baking dish

4. Spoon some sauce mixture on to bottom of pan, layer with tortillas, then chicken, then cheese. Repeat until all ingredients are gone ending with cheese on top.

5. Bake at 350 for 15-20 minutes or until golden and bubbly
